Give soup a 75g protein boost with two unusual ingredients
As the weather becomes more chilly, many of us are reaching for comforting soups to keep us warm. However, did you know there’s a straightforward method to make your homemade soups even healthier?
A TikTok user known as @ketorecipes has revealed a brilliant trick for incorporating a massive 75g of protein into your soups, and it’s remarkably simple to achieve. Not only is this soup brimming with health benefits but, according to the creator, it’s also incredibly delicious and boasts a wonderfully creamy texture.
If you’re a fan of butternut squash, this recipe is certainly one to try.
To create the soup, he starts by cutting a squash in half, removing the insides and scoring it diagonally with a knife.
He then positions it in an oven-safe dish alongside some diced red onion and bell peppers.
Before roasting, he pours olive oil over the top, seasons with a touch of salt and his chosen spices, and adds a bulb of garlic to the dish.
The mixture is then roasted in the oven at 210C for approximately 45 to 50 minutes.
He explains: “When it’s done, blend it all together with the two undisputed protein superstars. I’m of course talking about bone broth and cottage cheese.”
In the video’s caption, he reveals that he uses roughly 500ml of bone broth and three-quarters of a tub of cottage cheese to complete the soup.
For an additional flourish, you can garnish the soup with a drizzle of cream or some freshly chopped herbs. This simple method for adding protein to the soup has captured widespread interest, with many individuals adding their own personal touches to the recipe.
One user shared: “I made it tonight, but swapped the squash for sweet potatoes.”
Another commented: “Cottage cheese? I have to try it now. Great idea!”.
A third person said: “Butternut squash is the bomb. I seasoned this with rosemary and thyme.”
A fourth remarked: “This seems deceptively simple. Haven’t seen it with the bone broth or cottage cheese before.”
